Being a woman and a distiller is rare—and you can feel it in every bottle. Beyond gender, distilling is an act of precision, emotion, and intention. The spirits of La Sauvage are delicate, elegant, shaped by a female hand in the heart of Burgundy.
Ecological
- La Sauvage is a distillery committed to an eco-responsible approach: local wood heating, rational use of water, supply of plants and ingredients within a radius of 50 km, organic farming, reuse of packaging.
Committed
In close connection with the territory, La Sauvage collaborates with brewers, winegrowers and local herborists to create spirits anchored in their Vezelian terroir.
Asquins, the distillery
The distillery is based in Asquins, close to Vézelay (Yonne).
This is where the stills, the aromatic plant garden, the manufacturing rooms and the aging cellars are located.
Visits open to individuals and groups from Tuesday to Saturday morning, and by appointment.

Vézelay, The shop
In the heart of the listed village of Vézelay, the shop La Sauvage is a sales and discovery space.
Gin creation workshops, guided tastings, and a selection of artisanal spirits, infusions, natural cosmetics and local products. Kids friendly welcome.
Meet the team
Clothilde Nollet
Distiller
Originally from Vézelay, I wanted to develop an activity that is connected to the territory in which I live. And what a terroir! Nature is very preserved here and full of little-known plants. The challenge is to create original recipes with taste and a varied aromatic palette.
Passionate about cooking and very creative, I love thinking up new recipes for alcoholic and non-alcoholic drinks.
